Coffee Grinders
Matching the consistency of the grind with the brewing method is critical to extracting the optimal amount of flavor from the roasted beans.
Coffee grounds which are steeped in water, such as is the case with French Press or Toddy, need to be ground coarser. This will prevent your coffee from having an "over-extracted, bitter taste".
Faster brewing methods, such as for Espresso or Automatic Drip, require finer grounds in order to keep the coffee from tasting week or watery.
In general, conical burr grinders will provide you with the widest range in grind settings and preserve the most aroma.

Have you ever wondered why some china is “bone,” some “fine,” and some just “china”? Where does porcelain fit into this?
And while we’re at it, if earthenware is as hard as a rock, does that make it stoneware?
Well, you’re not alone. And it’s not your fault.
The lines are blurry, and every region and manufacturer has had their own way of defining what should go into their products.
The best pottery has always been the thinnest and most refined.
English craftsman realized that by adding calcium phosphate to porcelain in the form of oxbone ashes, they could go beyond the limits of porcelain’s fragility, creating works so fine and white that they became translucent.
As such, English Bone China has never been surpassed in the last two hundred years. The most highly skilled craftsmen are still to be found producing English Bone China today.
The designation “Fine China” (but not Fine Bone China) usually refers to china that lacks actual bone, instead employing aluminum silicate to mimic certain lost properties, unfortunately with somewhat sub-standard results.

Who invented the Tea Cozy?
The English, Irish, Norwegians and Danish have,
at one time or another, all been credited with the invention of the Tea Cozy.
The generally accepted version of how the Tea Cozy was invented goes back to the 1600s and the Irish.
Farmers in Ireland would typically have a large pot of tea with dinner each evening.
The story goes that one evening a farmer was having dinner when he reached across the table and his hat fell off, covering the tea pot.
Later when he went to pour more tea and removed the hat he discovered the tea was still very warm.
His wife desided to make a cover for their tea pot and called it a "cosy".
What is a Tea Cozy, anyway ?
A tea cozy is a fabric cover, much like an oven mitt, which is placed over a teapot in order to prevent heat loss.
Cozies come in a variety of shapes and sizes.
Most are designed simply to cover the entire pot, handle and spout.
Some, however, are made with openings and elastic so that they cover only the body of the teapot, leaving the handle and spout exposed so that you need not remove the cozy in order to pour the tea.
A cozy is primarily useful if you make several cups at a time and want the extra tea to remain hot in the pot until you are ready to drink it.
Note that ceramic handles tend to become very hot when the pot is kept warm in this fashion. If you have never used a cozy, be careful!

Cast Iron Teapots
Tetsubin or iron teapots were originally kitchen items used for boiling water and brewing tea. These tetsubin generally were not ornate as they were commonly left on or over a hearth, to provide heat and humidity during cold weather.
During the mid-19th century as infused tea drinking became popular, tetsubin were no longer viewed as kitchen items, but as status symbols.
Some of these tetsubin were elaborately decorated with high relief designs and inlays of copper, gold and silver. The two prefectures best known for tetsubin are Iwate, which is considered to produce the best designs and quality at a reasonable price, and Yamagata, which is best known for the handmade tetsubin and changama that are preferred by the tea ceremony masters.

Use the tetsubin to brew tea, not as a stove-top kettle.
Do not leave tea standing in the tetsubin for a long period of time. Dry fully before storing.
Do not wash the tetsubin with abrasive pads or use harsh detergents or soaps. Simply rinse it with plain water and wipe it dry after each use. In Japan the natural mineral layer buildup inside a tetsubin is considered to be good for the health and helps to prevent rust from forming inside.
Do not expose your kettle or teapot to salt or oil.
